CHEESY CHICKEN ENCHILADA DIP
INGREDIENTS
2 cups shredded colby jack cheese
1 cup shredded rotisserie chicken
2 medium Roma tomatoes, diced
1/2 medium yellow onion, diced
1 cup enchilada sauce
kosher salt
To garnish: chopped cilantro
INSTRUCTIONS
1. Preheat your oven to 350°F.
2. In a large bowl, toss together the cheese, shredded rotisserie chicken, diced tomatoes and yellow onion, then fold in the enchilada sauce. Season with salt to taste.
3. Pour your dip mixture into an oven-safe baking dish and bake for 20-22 minutes, until the cheese is nice and bubbly. Garnish with cilantro and serve with tortilla chips.
